Raw Vegan Peach Cobbler Ice Cream

Out of the dozens of raw desserts I’ve made, this one is my absolute favorite. It’s made with layers of crumbly doughy raw pie crust, banana and peach ice cream, and warmed peach slices. This is a dessert you can feel good about eating!

Tools

  • Food Processor
  • High Powered Blender like a Vitamix.
  • Dehydrator (Optional)

Shopping List

  • 2 cups pecans
  • 8 medjool dates
  • 2 peaches
  • 6 ripe frozen bananas
  • 1/2 teaspoon cinammon
  • 1 vanilla bean or vanilla extract

Raw Vegan Peach Cobbler Ice Cream

Serves 3-4

Crust

  • 2 cups pecans
  • 8 large medjool dates

1. Place all ingredients in food processor. Pulse until coarsely chopped. Set aside for now.

Toppings

  • 1 peach, sliced

1. Slice one peach and put on a dehydrator tray. Set on 145 degrees F for 30 min. If you don’t have a dehydrator you can use a toaster oven and warm to your liking.

Ice Cream

  • 6 ripe frozen bananas
  • 1 fresh or frozen peach
  • 1 vanilla bean (or 1 teaspoon of vanilla extract)
  • 1/2 teaspoon cinnamon

1. Place frozen bananas and peach in a high speed blender and blend.

2. Add in the vanilla bean and cinnamon.

Layering

Now layer the crust, ice cream, and peach slices and enjoy in a cup or bowl.
